A brunch without a few cocktails is like a Las Vegas pool party without sunshine. No matter what your night before consisted of, regardless of how many shots were consumed, at some point you will be summoned before the gods of the bottomless mimosa for your moment of reckoning. There will be excuses (“But I’m so hung over…”), there will be promises (“But I’m starting my juice cleanse today…”), there will be straight-up lies (“But I’m going to church after this…”). They will all be for naught.

Eventually, a mimosa will be placed in front of you. You will drink it, you will like it and you will have another. To paraphrase the great Janet Jackson, that’s the way brunch goes.

For a restaurant named after a euphemism, Pink Taco entered the brunch game way too late. But now that it has arrived, it’s as if it has always been here. The patio overlooking the pool deck at the Hard Rock Hotel is tailor-made for a Sunday afternoon spent nursing mimosas ($9.99 bottomless) and indulging in small plates ($24.99 all-you-can-eat) before rallying for the famous Rehab pool party. We’d say get there early for prime seating, but no one arrives early to brunch.

If one person at your table orders all-you-can-eat, the rest of the table has to order all-you-can-eat, too. That’s the way the sweet corn tamale crumbles. But it’s worth it. There are more than three dozen small plates to choose from, ranging from a small but mighty list of breakfast foods like blue corn pancakes and plantain and nuts French toast to Mexican-themed brunch staples like huevos rancheros and scrambled egg chilaquiles.

It doesn’t hurt to start off with traditional guacamole, but step outside your comfort zone for the fried avocado, small bites of the fruit (yes, it is) paired with a lime aioli not unlike green goddess dressing, or bacon-wrapped jalapeños, whole peppers hugged as we all wish we could be by the seminal breakfast meat. More substantial selections come in the form of the carne asada, served over a coconut and plantain mash, chicken and waffles and the añejo burgers, a pair of the house’s sliders.

The menu is so extensive that you won’t get to everything. You’ll wind up at Mimosa No. 7 debating the merits of spiced maple pork belly vs. the mini lobster quesadilla, with good sense trying to break through the food coma to put the brakes on. Power through it for another round of the French toast or finally discover what a mushroom churro is.

For all the talk about mimosas, Pink Taco also offers bottomless Donkey Punch, a rum-fueled cousin of Jungle Juice, for the same price. Corona-ritas (turn that bottle upside down and plop it in a margarita) and sriracha Bloody Marys are also available, as is the shot girl, who’s got the whole peer pressure thing down to a science. When you’re ready to throw in the towel, pick another one up for Rehab … or rehab. Small r or big R, it doesn’t matter. Brunch is and always has been a judgment-free zone.
