If you want a great bartender to make you a great drink, then visit The Dorsey at The Venetian and ask for lead bartender Juyoung Kang. When it comes to respected names in the Las Vegas food and beverage industry, this Philadelphia-born woman is at the top of the list.

Since moving here a decade ago, she’s been one of the go-to people to help set up, open and organize bars for hot spots like Rose. Rabbit. Lie at The Cosmopolitan, downtown bars including The Laundry Room, Park on Fremont and Commonwealth, and The Dorsey, when it opened in 2016.

“When I first started bartending, I went to the liquor store and wrote down every brand and every category of spirits and familiarized myself and learned all of them,” Kang says. “It was like this great mystery that I wanted to solve. I love solving puzzles, crosswords, jigsaws—so it fit perfectly with me. I’m really good at organizing bars, setting them up, making it simple. I see the whole picture; I get into the details. It’s solving a puzzle, there’s that connection.”

Behind the bar, Kang is known for making some of the best booze-forward cocktails and her whiskey knowledge is on point, too. “I’ve also finally figured out how to perfect the egg white cocktail, to make it silky,” she says.

While much of her knowledge is self-taught—with a constant eagerness to continue learning—she’s also had great mentors. “A lot of people along the way believed in me to do well, and they gave me mentoring, tips and advice, and I took it and used it, and that’s why I am where I am,” she says.

Kang is also dedicated to mentoring the next generation of bartenders. “I always say that every bartender should be kind and have a bit of humility,” she says. “You have to be able to own the bar but with kindness. Every guest that comes in front of you, there has to be that level of respect given.”

Libation: The Yang

In celebration of Chinese New Year, The Dorsey offers an exclusive cocktail through Feb. 28, The Yang. It’s mixed with St-Rémy VSOP brandy, Mount Gay Black Barrel rum, maraschino liqueur, and lime and orange juices. “The flavor and taste is like a rich rum mojito, or like a rum swizzle cocktail,” Kang says. Stop by The Dorsey for its new Social Hour, too, every Thursday through Sunday from 4-8 p.m. for specially priced cocktails, wines and champagnes by the bottle.
