Summer Cookout on the Strip
As DJ Jazzy Jeff and The Fresh Prince once sang, “Summer, summer, summertime / Time to sit back and unwind.” And what better way to sit back and unwind than with a cookout, where other people do the cooking for you. Here, we offer you some excellent picnic-in-a-park-style cuisine options, courtesy of some of our favorite Las Vegas eateries.
Memphis Ribs (Virgil’s Real Barbecue, The Promenade at The Linq)
The story of Virgil’s Real Barbecue goes like this: The owner is such a barbecue connoisseur that he toured the entire country trying to find the best barbecue dishes from each region. The food at Virgil’s is an homage to all these fantastic plates. For ribs, it’s no surprise they are cooked Memphis-style. Dry rubbed with spices like paprika and cumin and with a touch of sweetness from brown sugar, these spare ribs are also smoked on hickory wood to give them deep flavor.
Fish and Chips (The Still, The Mirage)
The craft bar and restaurant in The Mirage has a cool Airstream trailer with a food-truck kitchen inside, creating that only-in-summer vibe. Try the beer-battered white fish—vinegar powder gives it a tartness that is reinforced with the zest of a caper-fennel tartar sauce. Add some crinkle-cut french fries to the mix and we can take this picnic to your favorite park in Great Britain.
Beef Tenderloin Skewers (Beer Park, Paris)
Putting meat and veggies on a pointed stick and roasting it over a fire has probably been a favored method of cooking since caveman times. The beef tenderloin skewers at Beer Park mix up filet mignon, onions, portobello mushrooms and chimichurri sauce, all served picnic-style.
Hot Dogs (Beerhaus, The Park)
Let’s be real. You can’t have a picnic in the park without some sort of hot dog in the mix. For that, we are going to Beerhaus at The Park. The Beerhaus Brat features IPA cheddarwurst while the City Dog is topped with sauerkraut, relish and spicy mustard. Don’t forget a craft beer.
Churro Shake (PBR Rock Bar, Miracle Mile Shops at Planet Hollywood Resort)
For dessert, we want to cool off with 20 ounces of milkshake goodness. The churro shake from PBR Rock Bar in Miracle Miles Shops kicks up your average milkshake with the flavors of the favorite dessert. And not just the flavors, but actual bits of churro are in it! Along with caramel, vanilla ice cream, cinnamon and whipped cream, this is the perfect way to end the picnic.
