When warmer weather hits Vegas, it’s time to chill out and take full advantage of daytime hours, and brunch makes perfect sense. Here are a few of our favorites.

Greene St. Kitchen, the snazzy new restaurant from Clique Hospitality at the Palms, debuted Brunch'n in May. The poolside patio environs of the venue plays host to a cadre of colorful characters, like a giant bunny, a Jell-O shot-dispensing “cigarette” girl and a gal with a see-through umbrella hung about with doughnuts for the taking. Get everything from avocado toast to vegan sliders and mimosas, or order one of the huge, made-for-sharing items like the Go Big or Go Home Sangria, the massive Sushi Yacht or the Jumbo Pancake, a pink icing-covered extravaganza. Music is a big part of many brunches, and you have plenty of options. At Paris, Beer Park’s Funk and Electric Brunch features both DJs and live music plus smoked brisket hash, a hangover breakfast sandwich (and we all need those occasionally) and 36 beers on tap! If you like something a little mellower, Mabel’s BBQ recently introduced its Sunday Bluegrass Brunch at Palms. Check out the all-you-can-eat and all-you-can-drink offerings for $29-$49, with such goodies as pork belly hash with poached eggs, brioche French toast and the Mabel’s House-Made Bloody Mary with Tito’s and Secret Aardvark hot sauce. NoMad Jazz Brunch at NoMad Bar makes for a chill Sunday morning with jazz music by Hot Club of Las Vegas and delish dishes like the crisp light tarts. NoMad Pool features a Brunch All Day menu with lots of vegan options including fava bean hummus and house-made soft-serve (it’s incredible) weekdays. Those same fabulous items are available weekends at the Jemaa pool party, which has a stellar drink program and DJs to boot. Downtown, Eureka! offers Saturday and Sunday brunches, with live music Saturdays. Some of the more lovely items include a Six-Pack Breakfast Burrito with egg, turkey and black beans, a breakfast sandwich with smoked mozzarella and avocado toast.

Border Grill at Mandalay Bay is a perennial favorite, with unlimited small plates for $42.99 (love those tamales!) and bottomless mimosas, Micheladas and bloody Marys for $25. (10 a.m.-3 p.m. Sat.-Sun., 702.632.7403)

Doughnut bread pudding French toast might tickle the fancy at Hearthstone in Red Rock Resort, but equally as enticing are pizzas like the Breakfast Pizza with bacon, sausage egg and maple syrup or a tableside bloody Mary cart. (10 a.m.-3 p.m. Sat.-Sun., 702.797.7344)
