It seems inconceivable that vegetarian and vegan restaurants were almost impossible to find in Las Vegas at one point. And one of the most recent arrivals to the Strip is True Food Kitchen, which promotes anti-inflammatory foods in order to promote better disease prevention. The results are stunning—and delicious.

Even the cocktails here have a healthy twist to them. Try a citrus skinny margarita, made with organic tequila, cucumber and mint, or a Causemo, made with organic vodka, prickly pear and lime.

Menu highlights include a teriyaki quinoa bowl, a bright blend of broccoli, sliced rainbow carrots, bok choy, mushrooms, brown rice, avocado and toasted sesame seeds, and a savory chicken sausage pizza with crushed organic DiNapoli tomatoes, roasted fennel and smoked Gouda.
