An unexpected treasure is tucked down restaurant row at Westgate Las Vegas. The unassuming entrance to Edge Steakhouse leads into a beautifully decorated bar and lounge area—worth a stay for a cocktail with the bartenders—and through that space is an upscale, decadently designed dining room.

Starters here are a carnivore’s dream. Try the roasted bone marrow with a piquant onion jam or the melt-in-your-mouth wagyu beef tartare served with Kaluga caviar, black truffle and a wedge of beef-fat toast. Edge dry-ages all the steaks in-house for 40 days and adds pink Himalayan sea salt blocks to the meat cases, which helps the aging process and permeates the cuts, helping to enhance the natural flavors.

The domestic wagyu New York cut, top sirloin and filet mignon are standout picks. End with a dessert favorite, the Tahitian vanilla crème brûlee with berries.
