Before Tom’s Urban opened its doors in December at New York-New York, 1,900 people were interviewed to fill 200 positions, according to Erron Halen, general manager of the eatery. “We wanted to select people that had great experience within the industry,” he explained. “But it’s personality that drives our service. The personality really had to shine.”

By extension, those personalities create a positivity that trickles down to the customers and creates a fun environment, Halen said. As general manager, Halen prides himself in being a great coach for employees, and leads his team in offering the best in customer service.

As the Iowa native describes Tom’s Urban, his passion for his career is apparent. From the time he was in college, he said, he knew his path would lead to a career in the restaurant industry. That drive has taken him all across the country, managing in cities like Chicago, L.A. and Scottsdale, Arizona. But he considers Las Vegas the biggest success so far. “People see my passion and can tell I love what I do, every single day,” said Halen.
