The restaurant group Block16 Hospitality has kept busy in the past three months, opening two new restaurants at The Linq. At the helm of the new eateries, located in the new entertainment district between the Flamingo and The Quad, is corporate executive chef Anthony Meidenbauer. “They wanted one-off restaurants from different brands,” Meidenbauer said of Caesars Entertainment, the company behind The Linq.

First up, Haute Doggery, the group’s gourmet take on the hot dog. This fancy hot dog stand clocks in at 1,000 square feet, with a logo written in ketchup and mustard and gourmet dogs on the menu. You’ll find dishes such as The Gold Standard, a swanky frank with condiments such as aged goat cheddar cheese, baby arugula, smoked bacon, tomato confit and a garlic and chive aioli. Specialty hot dogs representing different regions of the country also make the menu. “We do a lot of travel,” Meidenbauer said. “These hot dogs pay homage to the different dogs around the country.”

The new Flour & Barley just opened in March with “flour for the pizza, barley for the beer.” This pizza and beer joint was “made for the masses, chef-inspired and approachable.” A wood-fired oven stands at the center of the restaurant with an open kitchen. “I don’t want to put any label on (the pizza),” Meidenbauer said. “We’re blending Neapolitan- and New York-style.”
