Pork is definitely one of the starring attractions at the hot new import at The Venetian, including the aforementioned fried green tomato BLT. The greens and tomato jam atop the appetizer are a tad light, but a house-made pimiento cheese spread more than makes up for that. A pork croquette is a quick bite, and pork terrine is served with pickled cauliflower. You’ll find Virginia ham in several dishes, including a creamy shrimp and grits. St. Louis-style pork ribs are slow cooked, and a tomahawk Niman Ranch pork chop weighs in at a staggering 18 ounces.

Yardbird brings in the South in other ways, too, with fried okra, macaroni and cheese, chicken and waffles, corn bread and juicy watermelon, touched up with chili powder.
