Decadent Turn

Global culinary sensation Jean-Georges Vongerichten achieves new levels of luxury in the beef program at his namesake Jean Georges Steakhouse (Aria, 877.230.2742). The A5 Certified Kobe beef from Japan offers unbelievably rich flavor, especially once this restaurant’s masterful crew has given it a turn on a custom-built grill over apricot wood and finished your steak with rendered beef fat, sea salt and cracked pepper.

But the beef is only the beginning here. Smoked baby back ribs are lacquered in passion fruit barbecue sauce. Foie gras brulée is served with brioche toast and apple-jalapeño marmalade. Black truffle mac and cheese and crunchy potatoes with chili yogurt are favorite sides, and the kitchen comes to you with tableside carving of smoked wagyu brisket or shareable tomahawk or porterhouse cuts. Of course, you can always augment your main attraction with a half-pound of king crab legs, bone marrow, diver scallops, saltwater prawns or Dungeness crab prepared Oscar style. Off the Strip: 18Bin

As a spacious second chapter to the popular Bin 702 wine bar at Downtown Container Park, the new 18Bin (107 E. Charleston Blvd. No. 150, 702.202.2484) is a comfy-yet-hip medley of experiential nooks. On the patio, traditional bistro seating shares space with a corner stage and an oversize sculpture of a Spam can. Inside, a retro ’70s vibe gives the bar a slightly edgy feel, while a game room counters with a playful atmosphere. Cajun gumbo and jambalaya hint at New Orleans-bred chef Jennifer Landry’s roots, and cheesy ropa vieja shepherd’s pie and indulgent brisket-blend hamburger are among the best deals downtown. –C. For beer enthusiasts who like a side of history with their frosty brews, “Able” and “Baker” are the names of the first two atomic bombs detonated at the Nevada Test Site in the 1950s. Able Baker Brewing (1510 S. Main St., 702.479.6355) boasts more than 30 beers brewed in-house, and its equipment is on display for all to see while drinking, eating or watching a game.
