Gordon Ramsay Steak (Paris, 702.946.4663) now benefits from a more vibrant color scheme and updated artwork that distinguishes the restaurant from the classic steakhouses on the Strip. The new chef’s table is the prime place to take your party for a one-of-a-kind culinary experience focused on large-format, shareable dishes served tableside, including a half-rack of prime rib. While signature favorites like the Scotch egg, fish and chips, roasted Beef Wellington and the finest cuts of Japanese and American beef are still ready to order, more seafood and vegetarian-friendly offerings have been added. A vegan menu proves Ramsay and team can do it all, from harissa cauliflower steak to a “crab” cake made with hearts of palm.

It’s probably best known for its stunning views of the Strip from a unique 50th-floor perch, but those who regularly revisit VooDoo Steak (Rio, 702.777.7800) do it for the signature flavors that set this refined restaurant apart. The experience begins with the Witch Doctor, a spirited cocktail of rum and fresh fruit juices served in a fishbowl over dry ice. The lobster bisque is one of the all-time favorites at VooDoo, rich, silky and satisfying.
