Craving some good ol’ Italian cuisine? Italian that is both authentic and innovative and delicious? Enter celebrated chef Marc Vetri. While his eponymous restaurant Vetri Cucina at Palms is currently closed, the chef brings his team to the kitchen of Terra Rossa at Red Rock Casino for a restaurant takeover. The new pop-up, Osteria Fiorella, features Vetri’s eclectic menu of Northern Italian dishes inspired by his Italian-American upbringing in South Philly.

The new menu is packed with a bounty of recipes that Vetri has perfected over his cooking career, which includes his time living and cooking throughout Italy. Choose from an assortment of antipasti and salads, pizzas baked in a wood-burning oven, pastas, main courses, desserts, wines and cocktails. The pasta is made fresh daily and includes dishes like rigatoni with Fiorella sausage ragu, pappardelle duck ragu with black olives, and the decadent ricotta gnocchi with brown butter and crispy leeks. There’s Sal’s famous meatballs, served with bruschetta and ricotta; Vetri’s notable veal chop Milanese; ribeye with summer tomato salad; and a traditional whole grilled branzino. The pizzas include traditional recipes as well as Vetri’s innovative spin on pies like the Sicilian tuna with olives, white onions and tomatoes. While enjoying the Osteria Firoella pop-up menu, guests can settle into the lively and casual atmosphere of the restaurant’s space, complete with a bar, beautiful patio setting and an open-kitchen concept.
