The winter weather has officially arrived in Las Vegas, and there’s no better time to enjoy some of that comfort food our city is so famous for. And fewer restaurants will send you out more fortified than Virgil’s Real Barbecue at The Linq Promenade, a huge hit since opening, and for good reason: No matter your taste in barbecue—Memphis, Kansas City, the Carolinas, Texas—you’ll find it here. This is truly a catch-all haunt, one you’ll be recommending heartily to your friends and loved ones long after you’ve returned home.

The restaurant itself is large and inviting, with floor-to-ceiling windows offering some great people-watching while you enjoy a pre-meal cocktail. And what a massive cocktail list to choose from! Obviously, we’re partial to the meal-in-a-glass referred to as Virgil’s Big Bloody Bull Rider, a classic Bloody Mary piled high with goodies to accompany the deliciousness in a gigantic mug. But there’s also an endless array of bourbons, tequilas, wines, draft beer and much more. If you can’t find it at Virgil’s, it likely doesn’t exist.

Get your table in a serious celebration mode with ridiculously tasty appetizers like the Trainwreck fries, piled high with melted cheddar and jack cheese, applewood smoked bacon, scallions, jalepenos and ranch dressing, or the BBQ nachos, accented with barbecued pulled chicken, Carolina pulled pork, Texas beef brisket and jalapeños. For a nice sample of everything, opt for the Trash ribs, perfectly tender ribs and a small cornbread muffin accompanied by sides like macaroni salad, potato salad and more.

You definitely have your work cut out for you deciding what to order for your main course, given the wide range of styles of barbecue available. A great option is the Carolina pulled pork sandwich, featuring delicious slices of seasoned pork butts, slow-smoked for up to 14 hours and pulled with barbecue sauce and dry rub. You can’t go wrong with dry-rubbed and hickory-smoked Memphis-style pork spare ribs, and ditto for sliced Texas beef brisket, slow-smoked and drizzled with barbecue sauce. But here’s the best part: If you want all three, you can do that. Just order The Pig Out! This beast, which feeds two, puts together the Memphis-style ribs, Texas brisket and Carolina pulled pork, not to mention one half of a smoked, barbecued chicken.

Don’t forget the dessert! As you’d expect at a great barbecue joint, Virgil’s features a killer banana pudding, piled high with vanilla wafers and chock-full of big banana slices. If that’s not your thing, no problem—there’s also carb-crazy chocolate cake and apple pie, not to mention milkshakes (with chocolate straws, of course!). Now get back out into the cold weather, safe in the knowledge that Virgil’s has fortified you for at least the rest of the day!
