Chef Marc Vetri’s restaurant at Palms, Vetri Cucina, was a casualty of the pandemic (as Palms remains closed indefinitely). But in July, Vetri and his team set up shop at Terra Rossa at Red Rock Resort for a quick culinary takeover with Osteria Fiorella, a popup restaurant based on Fiorella, Vetri’s popular pasta joint in Philly. Then, by August, Osteria Fiorella went from popup to permanent, replacing Terra Rossa.

With classic and unpretentious Italian favorites, along with fresh pastas, breads, wood-fired pizzas, meats and more, there’s no doubting why the restaurant continues to impress diners. A few favorites include Sal’s meatballs served with whipped ricotta and a slice of focaccia; rigatoni topped with sausage ragu and Parmigiano-Reggiano; classic Margherita pizza; and a veal Parm with buffalo mozzarella and San Marzano tomato sauce. Other worthy bites include the prosciutto with red wine poached pears, the endive Caesar salad and the fried Brussels sprouts with maple glaze. For dessert, you can’t go wrong with the classic tiramisu.
