Twenty years ago, vegetarians were lucky to find enough side dishes on a restaurant menu to satisfy dinner cravings. Ten years ago, vegans were lucky if they found a small block of cheese made from rice that didn’t cost a whole week’s worth of groceries. Today, vegetarians and vegans alike can indulge in bacchanalian feasts, as the meat-free craze has finally gone mainstream. And the trend has lit up the Las Vegas Strip just as brightly as the neon does. Even meat-eaters are enjoying it!

The Wynn and Encore have restaurants dedicated to the vegan and vegetarian eater. In addition, meat-free and dairy-free menus exist at every eatery, and vegan chef Tal Ronnen works closely with each chef to create unique, delicious and healthy recipes for every manner of cuisine, be it Italian, Japanese, American or Chinese.

At The Forum Shops at Caesars, food doesn’t get healthier than at True Food Kitchen, a restaurant dedicated to sourcing seasonal and organic ingredients that have anti-inflammatory benefits. The menu is also packed with meat- and dairy-free options like quinoa, noodle and salad bowls, spaghetti squash casserole and butternut squash pizza. Also, on the Caesars Palace side, Nobu offers a Japanese feast—a vegetarian omakase tasting menu, in addition to vegetarian rolls, tempura and soups.

For some great breakfast and sandwich options—including some of the best bagels and veggie fixings on the Strip—Sadelle’s at Bellagio scores big points. Another delicious, all-vegan breakfast and lunch spot is Truth & Tonic at The Venetian. Delve into housemade Soyrizo tacos, organic cashew butter toast, roasted cauliflower Caesar salad, veggie burgers and sooo much more.

For some seriously delicious Italian vegetarian delights, Giada at The Cromwell offers celeb chef Giada De Laurentiis’ fresh California-Italian fare, with tons of tasty pasta options. Eataly at Park MGM has several eateries throughout the Italian marketplace that whip up fresh pastas and breads, made with seasonal veggies. Next door at New York-New York, stop by burger joint Shake Shack for quite possibly one of the best vegetarian burgers you’ll ever have—the Shroom Burger.

For you vegans, peruse a huge menu of meat- and dairy-free options at Slice of Vegas at The Shoppes at Mandalay Place. There are build-your-own pizzas, pastas, salads, soups, starters, desserts and sandwiches. (The meatball sub is wicked good!) For Mexican vegan cuisine, Nacho Daddy at Miracle Mile Shops at Planet Hollywood Resort offers some of the best nachos in the entire city, as well as Chick’n fajitas, tacos, chimichangas and quesadillas, and the drool-worthy crispy avocado street tacos. And for those that travel with meat-eaters, dine in upscale style at Bugsy & Meyer’s Steakhouse at Flamingo, which offers its own vegan and vegetarian menu.
