Spring is brunch season in Las Vegas, the right time to explore some of the city’s brightest offerings for this weekend daytime dining celebration. In Vegas, brunch isn’t just breakfast with booze, and it’s more expansive than a selection of sweet and savory dishes working in tandem. It’s a well-rounded and robust experience no matter the location, but the following destinations are the brunch spots the city is talking about right now.

Along downtown’s energetic Fremont East stretch, Peyote (702.333.5568) at the beautifully renovated former Fergusons Motel has quickly become one of the most hip and eclectic restaurants around. New chef team Daniel Arias and Isidro Marquez-Castillo just unveiled a new brunch menu served Saturday and Sunday featuring contemporary Latin American flavors with plenty of twists and turns. Check out their beer-battered shrimp tacos, toasted mollete bread topped with longaniza sausage and sliced avocado, traditional chilaquiles in a cheesy green sauce, and challah French toast with amaretto mascarpone cheese.

For a different vibe, the elegant NoMad Bar (702.730.7000) at Park MGM just launched a brunch program complete with live music, decadent dishes and of course a spectacular selection of signature cocktails to complement the experience. Start with smoked salmon tartare with trout roe and everything crumble, a fun new take on a classic dish, then consider a hearty breakfast burrito stuffed with suckling pig or rich short rib hash with poached eggs and shallot marmalade. NoMad’s lobster Benedict is sure to become a Strip brunch icon.

In Green Valley Ranch, Bottiglia Cucina & Enoteca (702.617.7191) dishes up a colorful array of everyone’s favorites, starting with acai granola bowls or orange caramel pecan sticky buns, and following through with blueberry lemon curd pancakes, king crab bucatini pasta and a toasty veggie panini. On the other side of the valley, sister restaurant Hearthstone Kitchen & Cellar (702.797.7344) at Red Rock Resort in Summerlin has a unique midday menu on the weekend, with standout dishes including buttermilk fried chicken and waffles with bourbon maple syrup, and a breakfast pizza with bacon, sausage and a poached egg. This pair of eateries knows how to satisfy their neighborhoods.

With two locations in Mountain’s Edge and Henderson, El Luchador Mexican Kitchen (702.260.8709) is another locals’ favorite that just relaunched a special brunch menu, available Saturday and Sunday from 11 a.m. until 3 p.m. at both restaurants. Everyone is ordering the sopes Benedict with fresh, traditional masa cakes as the foundation for your choice of meat plus poached eggs and chipotle Hollandaise sauce, but the rotating chef’s special is worth looking into, creative fare like churro French toast or various breakfast tortas.

Round things out back on the Strip with … a burger? Believe it. Bobby’s Burgers (702.946.4181), the fast-casual spot from celeb chef Bobby Flay, just opened its third Las Vegas Boulevard location at Paris Las Vegas, and it’s offering a breakfast menu from 7 to 11 a.m. That leaves plenty of time for brunching if you ask us, and with dishes like a New York-style bacon, egg and cheese sandwich, cinnamon maple oatmeal and a breakfast burrito in a whole wheat tortilla, these flavors are too big to be limited to the morning. Still, definitely get a burger, and don’t forget to crunchify it, Bobby-style, by adding potato chips.
