When it comes to Italian cuisine, Tuscany has long been a region in Italy known for its rustic, simplistic and fresh flavors—with meats, cheeses and wines serving as the cornerstone of every meal. On the Las Vegas Strip there’s one restaurant holding true to the pillars of Tuscany food and beverage, and that’s Toscana Ristorante & Bar by Eataly. 

The intimate, 94-seat restaurant is a combination of cozy and upscale with rustic touches like the open wood-fired grill and Tuscan-inspired décor. Start the evening with the Italian classic—a Negroni. Choose the gin, bitter and vermouth to create your perfect sip. Toscana also offers an impressive list of specialty cocktails, all with a classic Italian twist.

The food is simplistic in the recipe but rich in flavors, and we suggest starting with an antipasti course of the polpo, perfectly grilled octopus with rustic potatoes, bean purée and celery salad, or the prosciutto e mozzarella with house-made fried Tuscan gnocco fritto, prosciutto Toscano Piacenti and house-made mozzarella.

Main courses cover pasta and meat. Simple but with some of the best sauce you’ll have is the ravioli maremmani, al dente pasta pillows packed with spinach and ricotta with a Cosí Com’é tomato sauce and fresh basil. For a more substantial bite, dig into the 16-ounce NY Strip from Creekstone Farms or the chianti-braised short ribs. If it’s a special date or your tablemates are down to share, the 40-ounce tomahawk from Snake River Farms is impressive, with the cut cooked over a three-tiered wood-fired grill, slow roasted and reverse seared to perfection.  

Don’t leave Toscana without experiencing the new gelato cart. You get to be the master of your dessert by adding what toppings you like to the house-made sweet cream gelato that is scooped from a massive mound right at your table. Choose from an array of delicious toppings like crumbled cannoli shells, crushed pistachios, flourless chocolate crumble and Fabbri Amarena cherries—we say go for all the toppings!
