Over the decades, chef Shaun Hergatt has compiled quite a few noteworthy honors, from Michelin stars and James Beard nominations to high rankings on everything from the New York Times to Conde Nast Traveler. And he brings that sterling reputation to Caviar Bar, a combination of luxurious décor, tasty cocktails and, of course, a caviar menu, one that rivals any other restaurant on the Strip (or the world).

The cocktail menu has been designed to get the maximum amount of flavor from the selection of seafood and sundry other delights. Whiskey fans will adore the JP Old-Fashioned, made with Suntory Toki, lilikoi and shiso, while vodka connoisseurs will want to check out the Afternoon Tea, made with Ketel One, Timeless Tea, Earl Gray, toasted sesame and lemon.

If you’ve got the budget, you can go pretty crazy here with the Caspy Caviar selection. If you’re not sure what you want, opt for the flight, which includes Kaluga and Golden Kaluga, Osetra and Golden Osetra served with potato espuma, crème fraiche and chives.

But don’t stop there! Hergatt has packed his menu with so much more, from shrimp toast and crab cake to lobster rolls and Hudson Valley seared foie gras. There’s also a great raw bar, and the hamachi, bluefin toro and salmon tartare are highly recommended. You can also enjoy spaghetti pomodoro, spicy fried chicken and an 8-ounce Australian wagyu.
