How much do we love the celebrity chef’s newest Las Vegas venture, the French-themed Brasserie B by Bobby Flay? Let us count the meals:

• Breakfast from 8:30-11 a.m. Monday through Friday features classics like eggs Benedict, French toast and croque monsieur and madame, as well as signature Flay additions like the Bar Americain burger, so delicious with Gruyère, American cheese and bacon. And if you do go the burger route, by all means accompany it with sides like French fries with red pepper mayonnaise for dipping or crispy potatoes sprinkled with fresh herbes de Provence.

• Brunch from 8 a.m.-3:30 p.m. on Saturday and Sunday features many of the breakfast items, but adds delights like slow-roasted salmon served with honey mustard horseradish, gnocchi gratin with wild mushrooms and Gruyère, and chicken Paillard with pickled shallots, piquillo peppers, green olives and basil.

• Lunch from 11:30 a.m.-3:30 p.m. Monday through Friday lets you start off your experience with a prawn cocktail featuring smoked chili sauce, then move onto Vidalia onion soup with a Gruyère gratin and chicken liver mousse served with apricot preserves and toast before finishing with prime New York steak frites accompanied with béarnaise sauce. Or you could go huge with the Tower Magnifique, a beast of a seafood collection featuring green lip mussels, black mussels, clams, oysters, king crab legs and bay scallops Sophie.

• Dinner daily from 4:30 p.m. to close invites you to enjoy appetizers like duck confit with tangerine, almonds and pomegranate and hot homemade potato chips with Roquefort cheese sauce for dipping before moving onto entrées like skate, served with smoked chili butter, capers and tarragon, black bass almondine with fresh herbes de Provence and a pan sauce, and center-cut pork chop frites, served with calvados and orange vinegar.

Lest we forget, desserts here cannot be ignored. The raspberry clafoutis has a dollop of vanilla cream, the thin apple tarte is served with ginger glace and calvados caramel, the profiteroles are smothered with a French roast coffee glace and chocolate sauce, and the dark chocolate souffle is flavored with Grand Marnier sauce.
