In just a few short years, RPM Italian has risen to serious prominence on the Las Vegas Strip. Everything about this restaurant is deeply satisfying, from the warm, inviting dining room to the attentive waitstaff. If you’re a caprese fan, wait until you try the Maine lobster version here, utilizing succulent chunks of crustacean along with buffalo mozzarella, basil and San Giacomo balsamic. The bread section, always a staple of any Italian restaurant, offers rosemary and sea salt focaccia, truffled garlic bread and whipped ricotta and wild blossom honey, accompanied by focaccia.

Hot antipasti highlights include crispy Roman artichokes with caper vinaigrette and pecorino Romano, Mediterranean octopus with chickpea puree and celery, and prime beef meatballs with roasted garlic and Parmesan. Pasta courses range from carbonara, pictured, featuring spaghetti, black pepper pancetta and an egg yolk, to Mama DePandi’s Bucatini flavored with Parmesan and Genovese basil; steaks include a bone-in ribeye and Gorgonzola-cured wagyu strip; and chicken Parmesan and black truffle chicken Vesuvio are both as excellent as you would expect.

For a truly memorable dessert experience, order the Tableside Service, where a spumoni torta meringata is brought to your table and lit. When it cools, get ready for the combo of flavors of pistachio, vanilla, raspberry and warm chocolate sauce.
