For impeccable service in an elegant, old-school setting, restaurants in Las Vegas don’t get much better than Edge Steakhouse, where the standards are as high today as when it opened in 2015.

You’ll find a wonderful array of starters on Edge’s menu, from lightly fried spicy shrimp that get their kick from a sweet chili reduction to roasted bone marrow served with onion jam, marrow arancini, parsley and radish. If you decide to go with jumbo lump crab cake, we certainly couldn’t blame you, and this version gets a special kick from avocado aioli, lemon crème fraîche, cucumber and citrus.

Steaks are available in wet- and dry-aged cuts, from a 7-ounce filet mignon to a hearty 20-ounce dry-aged ribeye. Accompany any of these with your choice of seared scallops, charred jalapeño or caramelized onions, and then choose your sides. We recommend the black-and-white truffle mac and cheese made with white cheddar, Gruyère and Parmesan.

Not in the mood for steak? Seafood and poultry options are also available, from Skuna Bay salmon in a barigoule purée to a citrus-brined Mary’s organic chicken.

Whatever you do, do not skip dessert here. The warm chocolate lave cake is a can’t-miss for deep satisfaction, but for the indecisive, there’s a trio of crème brulées (vanilla bean, raspberry and chocolate), as well as a Chef’s Selection ice cream trio.
