Start your experience with a signature roll at the sushi bar. Highlights include Yoshi’s Cube, a tasty blend of chu toro, tuna, hamachi, kanpachi, salmon, tamago and avocado, and Battle Born Roll, featuring unagi, torched fluke and five-spice black bean sauce.

If you choose a table or booth instead, make sure to get something for the entire table. We recommend the whole Peking duck. This iteration is served with pancakes, bao, gem lettuce, cucumber, leeks, daikon, watermelon radish, orange, plum and hoisin sauces. Such a treat! Other fun shareables include toast that features an intriguing trio of uni, jamon Iberico and pata Negra ham.

Entrées include some of your favorites like chicken Panang, so succulent with Thai eggplant, heirloom tomatoes and straw mushrooms. But there are plenty of surprises in store, like the Dorade Royal, a crispy, deconstructed fish served with five-spice black bean, sweet chili and ume ponzu. And those looking for a truly unique experience have to try the Wagyu Beef Theory, where you enjoy everything from A5 Japanese wagyu strip loin and Black Hawk domestic black wagyu strip loin to wagyu shabu shabu—you choose either tobanyaki or cherry wood smoke.

Kusa Nori also shines for its happy hour menu, where you can not only enjoy a signature cocktail like Mr. Misunderstood, a blend of Woodinville bourbon, Misunderstood ginger whiskey, blueberry, lime and Fever-Tree ginger beer, you can enjoy light bites like bluefin tuna tartare, hamachi crispy rice and wagyu gyoza.

For a real treat, check out the teppanyaki menu, where you can get all your selections prepared in front of you—everything from Jidori chicken and a half-rack of domestic lamb chops to ebi jumbo tiger shrimp and diver scallops. The dessert selection ranges from shiso and Sakura, featuring shiso gelée, Sakura buttercream macaroons and peach champagne sorbet, to artisan-crafted gelato—your choice of chocolate, strawberry or matcha.
