The property now known as Westgate Las Vegas has some of the biggest bragging rights of any property in town. When it was the International, it hosted the legendary Elvis Presley residency; Liberace’s longest-running Las Vegas residency was at the property when it was the Las Vegas Hilton; and Westgate Las Vegas now hosts Barry Manilow’s residency, which recently broke Elvis’ record for most performances. But the bragging rights don’t stop there for the property. It’s also home to one of the best dining experiences you’ll find in Southern Nevada: Edge Steakhouse.

You know you’re in for a special night the second you step foot into this restaurant. It’s a lush modern environment with dark woods and red plush seating, immediately making you feel relaxed and ready to enjoy world-class cocktails and cuisine.

Before launching into an appetizer, make sure to check out Edge’s incomparable cocktail menu, with highlights including the Vegas Dream, a combo of Tito’s vodka, passion fruit, prosecco and a huckleberry reduction, all served in a pomegranate sugar-rimmed martini glass.

Now your taste buds are primed for the fun to come. Start with appetizers like the beef tartare, so flavorful thanks to the combination of smoked bone marrow, cornichons, pickled shallots, shaved Parmesan, pickled beech mushrooms, truffles and a cured hen egg, all served with crispy grilled bread for spreading. The jumbo lump crab cake is deeply satisfying with avocado aioli, lemon crème fraîche and cucumber, while yellowtail crudo is light and tangy with avocado, radish, cucumber and lime, all in a jalapeno lime vinaigrette.

To heighten your experience even more, take advantage of Edge’s caviar service, where you get your choice of Kaluga or osetra accompanied by salmon roe, sabayon, champagne pearls, deviled quail eggs, lemon crème fraîche, crepes, blinis and brioche.

Entrées are where choices start getting seriously tough. Yes, you could opt for a classic like the 7-ounce filet mignon (medium-rare for us!), which you can get king crab Oscar-style for a serious flavor boost. But there’s also seafood vying for your attention here, from Ora King salmon, served with delicata squash, Romanesco, shishito peppers, cauliflower risotto and chervil beurre monté, to Alaskan king crab legs with a lemon beurre monté for dipping. And we’d be remiss if we didn’t include Mary’s Organic Chicken, a citrus-brined poultry lover’s dream served with cippolini onions, royal trumpet mushrooms, baby Brussels sprouts and garlic potato purée.

End your perfect night with a dessert like Tahitian vanilla crème brûlée or the Milk Chocolate Sphere, melted at your table to reveal a warm s’mores brownie, vanilla Chantilly, pecan praline and salted caramel ice cream!
