In the mood for Mexican food? I sure am, and I know where to go. Let’s hit up Diablo’s Cantina at Luxor and try as much as we can!
We’ll start with a drink—you know how much I love mezcal, so I’m gonna go for the pineapple mezcal-rita, with El Silencio, agave, chipotle syrup and lime and pineapple juices. I know I’ll need another bev in about five minutes, so I’ll put in my order now for the mezcal Old-Fashioned, a twist on the classic, with muddled orange and cherry, Angostura bitters and simple syrup. What about you? I see several of your favorites—the paloma, with El Jimador silver tequila, grapefruit and lime juices; sangria, made with red wine, orange liqueur, cinnamon, brandy, lemon-lime soda and fruit; and the Mexican cucumber, a combination of gin, cucumber and fresh lime. The sangria, then? OK!
Now, we definitely agree on the nachos for an app, right? It’s got everything I love—fresh tortilla chips, pico de gallo, cheese sauce, crema fresca and pickled jalapeños. Shall we get the aguachile shrimp ceviche, with citrus-cured shrimp, mandarin orange, pickled onions, cucumber, red peppers and cilantro, as well? Wait, there’s queso fundido, too. Better add that. We are on vacation.
I guess it will be a little harder to choose entrées, but let’s give it a go. Diablo’s has excellent salads like the Vixen with salad greens, roasted corn, beans, pickled onions, pico de gallo and citrus-chipotle vinaigrette; I’ve had that before, it’s really good. But today, I am getting veggie enchiladas for sure. There are three other types—shrimp, chicken tinga and beef barbacoa, if that’s your choice. We get rice and beans, too, don’t forget. There are a bunch of types of tacos, too, like carnitas, el pastor, filet alambre, Baja fish and even rajas and mushrooms. If you’re in the mood for burritos, the shredded beef version is packed with slow-roasted brisket.
Oooh, here comes my Old-Fashioned. Want that paloma now?
If you want a bigger main, check out the steak tampiquena with achiote-marinated grilled steak. That comes over green chilaquiles and is topped with blistered chilis. The glazed salmon comes with a chipotle BBQ glaze and Mexican slaw. You choose. I want the street corn as a side, for sure, and fried plantains. Do you want to try the Diablo’s fries, too? I’m sure we can get a to-go box if we ask. Do you have a refrigerator in your room? If you don’t, we’ll just have to eat it all now.
Speaking of eating it all, let’s share dessert. Mexican flan, buñuelos and churros. Hmmm, I think we should get all three. I can’t make up my mind. The flan comes with vanilla custard, the buñuelos with vanilla ice cream and the churros with chocolate sauce.
