It’s simply amazing how much of a seafood mecca the Las Vegas Strip has become. Sushi restaurants dot all of Southern Nevada, our fish houses are some of the best in the West, and caviar service is right up there with some of the best locations in the world. For a superb example of all of this and much more, it doesn’t get better than Aqua, Shawn Hergatt’s magnificent restaurant that’s constantly rewriting the rules about what makes a seafood experience memorable.

The ornately designed space creates a welcoming feel, with room for those who want to enjoy themselves at the bar or large groups who want to dine in comfort seated in plush booths or at extended tables. Make sure to take advantage of Hergatt’s incredible signature cocktail menu, with some truly unique concoctions fashioned for every palate. Vodka lover? Try the Espress Yo Self, an oh-so-sweet sip featuring St. George’s vodka and coffee liqueur and salted caramel. How about tequila fans? The Paint the Town Red is dangerously drinkable with Flecha Azul, lime, mint and grenadine. And gin fanatics will flip for two powerful potables, both made with Botanist gin: Tokyo Treat, which gets its flavors from melon, lime and coconut cream (seriously, yum!); and the tropical-tinged Island in the Sun, with orange, pineapple and passion fruit.
The caviar portion of the menu here offers everything from Kaluga to Golden Osetra Special Reserve (choose between 50 grams or 125 grams depending on your group size), all served with homemade blinis, crème fraiche and chives. Pricey? Sure, but this is Las Vegas and you’re here to splurge, right?
Now that your taste buds are primed and ready, you’ll want to begin your journey proper with one of Hergatt’s high-end appetizers. Shrimp toast is pure bliss, served on brioche with crème fraiche and caviar sauce, while crab cakes are perched on frisée salad and sprinkled with espelette and accompanied by a citrus and wasabi aioli. For a really decadent app, head straight to the Hudson Valley seared foie gras, served with cherry tartare, cherry coulis and brioche.

Mains here are surf and turf at its absolute finest. Most of the steaks are from Allen Brothers and range from a wagyu tomahawk to prime ribeye. Seafood options include kataifi scallops with asparagus, coconut green curry and kaffir lime, lobster spaghetti pomodoro with San Marzano tomatoes and Parmigiano-Reggiano, and uni risotto with king crab, uni and gold dust. If you want to go more traditional, check out the filet branzino with citrus relish, caper brown butter and microgreens, or Chilean sea bass with potato espuma, hon shimeji mushrooms and chili oil. Whatever you choose, don’t forget the amazing sides, from a wild mushroom ragout made with heavy cream, brandy, beef jus and olives, or sautéed asparagus, served with sherry vinaigrette, crisped Parmesan and espelette.
