Vegas gets a fair number of restaurant openings, and not just your run-of-the-mill diners, either. This city boasts TV chefs, outposts of Michelin-starred restaurants and viral sensations by the boatload. So, it’s saying something when I tell you that the newly opened Stubborn Seed in Resorts World Las Vegas has been the hottest ticket from the moment it opened two months ago.

And rightly so. The restaurant has it all—chef, gorgeous décor and food to die for. Chef Jeremy Ford had his big break when he won a cooking competition and scored the executive chef position at Jean-Georges Vongerichten’s Matador Room in Miami. He went on to win Top Chef’s 13th season and, in 2022, starred in Fast Foodies and opened Stubborn Seed in Miami with Grove Bay Hospitality Group. That year, he was also named a 2022 James Beard Award semifinalist, and Stubborn Seed earned Michelin stars from 2022 to 2025.

The success of that Stubborn Seed led to another opening in Resorts World Las Vegas, and this is a plush, very trendy ode to its Miami birthplace, with art deco-style arches curving over the entrances and walls, chandeliers accenting each room in the house and a huge mural hanging over the open kitchen at end of the dining room.

To one side of the entrance is a welcoming curved bar and a sweet lounge with patio, perfect to hang in while waiting for a table or indulging in cocktails, small bites and more casual fare. Cocktails to try include the SGT Peppercorn, a delicate sip with Don Julio reposado, bergamot, Domaine de Canton ginger liqueur and pink peppercorn. It’s delightful.

Tasting menus feature courses like kalamata olive ciabatta, where kalamata dust works with whipped feta and pickled radish to stoke your appetite. The sake-and-citrus cured Japanese yellowtail with chili ferment, crispy tapioca, ylang ylang, compressed Asian pear and passion fruit buttermilk emulsion is beautiful, as is pretty much every item presented to you by the attentive staff. A vegetarian version of this dish is easily one of the best things I’ve experienced, with the pear and passion fruit meshing so well.

Fragrant spiced barramundi with galangal curry is especially treasured by diners, while Westholme Australian wagyu strip loin brings a new appreciation for beef. If there are not enough courses to satisfy, there are add-ons offered, such as the Kaluga caviar macaron with champagne citrus crema and dill. “The tasting menu is a culinary journey and we’re ready to take folks for a ride,” Ford said in a press release shortly before the restaurant opened.

What else will you find here? Cacio y pepe cheesy puffs and truffle organic chicken served on pomme purée will excite your taste buds, while the JJ’s Guilty Pleasure burger features two smash patties, smoked beef bacon and American cheese.

End the meal with citrus pavlova, layering olive oil cake, yuzu pastry cream and mandarin fruit pate with a crunchy egg white cookie—and make a vow to come again as soon as you can access the reservations page.
