Secure your seat to a truly indulgent meal—Taste of Tokushima inside Kusa Nori at Resorts World Las Vegas, on Nov. 14. The restaurant is hosting Japan’s Tokushima Mitsuboshi Beef producer, the country’s first JGAP-certified, three-star producer of wagyu. The company’s wagyu cuts are all certified with Japan Good Agricultural Practices (JGAP verifies that farms stick to the standards for sustainable practices).
The one-night-only, multicourse dinner pairs the beef with sake selections from Japan’s most esteemed sake brewery, Dassai, as well as wines by the glass from Napa Valley wine producer Kenzo Estate.
Dignitaries from Tokushima will guide guests through two seatings at 5 and 7:30 p.m. The menu includes shigoku oyster tempura with ossetra caviar and yuzu sabayon pearls paired with a Dassai “sparkling” cocktail; Tokushima Mitsuboshi Beef gold star wagyu tartare with fresh wasabi, Jidori egg yolk mimosa and Fundodai shoyu, paired with a Dassai Blue 23 junmai daiginjo; amadai with grilled Tokyo scallion and sudachi butter, paired with a Dassai 45 junmai daiginjo; an imperial sushi spread with otoro, Hokkaido uni, Alaskan king crab, kuruma prawn, blue fin tuna, kinmedai snapper and kanpachi, paired with a Dassai Future with Farmers junmai daiginjo and Kenzo sauvignon blanc Napa Valley 2024; Tokushima Mitsuboshi Beef gold star wagyu and black truffle, pictured, paired with a Kenzo Rindo cabernet sauvignon Napa Valley 2020; and, lastly, a dessert of poached nashi on a miso caramel honey tuile spiced cake with roasted persimmon cream, paired with a Dassai umeshu.
