No matter if you’re here for a multicourse journey or just a killer burger at the bar, Stubborn Seed—chef Jeremy Ford’s Miami-born restaurant now at Resorts World Las Vegas—has you covered.

The Top Chef season 13 winner and Michelin-starred chef has brought his bold, globally influenced cooking to town, and you should do your best to get a reservation just as soon as you can.

Ford specializes in tasting menus that read like passport stamp collections. Take the current lineup: You start with Kalamata olive ciabatta, followed by sake and citrus-cured Japanese yellowtail topped with crispy tapioca and compressed Asian pear. Somewhere in this six-course procession of flavor comes the fragrant spiced barramundi, nestled in galangal curry with shiitake sofrito. The finale arrives as citrus pavlova with fall figs and caramelized pistachios.

Prefer to order à la carte? The menu gets even more expansive. JJ’s Guilty Pleasure Burger—double wagyu onion smash with smoked beef bacon and American cheese—lives up to its name.

The space itself makes a statement: art deco vibes, 130 seats, three-tiered ribbed-glass chandeliers and a glass-fronted kitchen. On one wall, a hand-painted mural inspired by The Great Wave off Kanagawa crashes across the dining room. The room is polished without feeling stuffy, which seems on brand. After all, this is a chef who just won a Green Michelin Star for sustainability efforts, but also puts a burger on his fine-dining menu.
