Alongside it sits the DKA (Ansel’s take on the kouign amann and the one that wins my heart every time), with caramelized edges that crackle on contact and buttery layers that practically sigh as you bite into them.

Viennoiserie is where Ansel’s French pedigree truly flexes. Croissants are deeply golden. Mini madeleines are an unparalleled bite of pleasure. Even the gluten-free liège waffle, studded with caramelized pearl sugar, is an airy delight. And now, it’s the right time to indulge in red-hued and holiday-themed treats.

If Caesars Palace is Ansel’s jewel box of pastry perfection, then Dominique Ansel Marché at Paris Las Vegas is something broader and deliberately more communal.

Inspired by the sidewalk markets of France, Marché, which opened in 2024, marks an entirely new concept for the James Beard Award-winning pastry chef. The space channels the feeling of an open-air Parisian market, with greenery, café-style seating and the hum of activity that makes you want to linger. It’s not just somewhere you pop into between shows; it’s a spot you could reasonably plan a meal or a Valentine’s Day meetup with some friends for a leisurely coffee klatch with holiday treats.

The sweet side remains undeniably Dominique. Croissants and viennoiserie are baked fresh each morning as they are at Caesars, seasonal fruit tarts and holiday specials highlight what’s at its best right now, and made-to-order crêpes—both sweet and savory—anchor the experience. Ice cream and other rotating treats round things out, offering just enough temptation to derail even the most disciplined among us.

But Marché expands the conversation with savory offerings. The rotisserie chicken—roasted Amish bird with herb butter, green goddess, charred lemon and a choice of garlic herb fries or roasted vegetables—reminds you why simple done well never goes out of style. The croque monsieur does what a croque monsieur should: Black Forest ham and melted Gruyère bound by béchamel on house-made sourdough, served warm. It’s simple, satisfying food, the kind you’d happily eat standing up at a market stall or seated with friends.

What makes Marché work is how beautifully it complements the Caesars Palace bakery. One is a concentrated hit of pastry brilliance; the other is an invitation to stay awhile. Together, they show the full range of Ansel’s vision: technically exacting yet playful, rooted in French tradition and laminated with copious butter.

You might still come for the Cronut. That’s fine. But between Caesars Palace and Paris Las Vegas, Ansel has made it clear that the real magic is in creating places you want to return to again and again.
