Bobby Flay has traded his grill marks for gilded chandeliers at Brasserie B Parisian Steakhouse, his spot tucked inside Caesars Palace. The chef who built his reputation on Southwestern boldness—Mesa Grill’s smoky chilis, perfectly charred steaks, his Iron Chef mastery of high-heat cooking—now operates within the elegant confines of a Parisian brasserie. With multiple restaurants, countless television appearances and a signature style defined by fearless seasoning, it was inevitable that the chef would embrace French cuisine.

The 140-seat dining room, with its cane-backed chairs, handmade subway tile and blown glass lighting, channels classic French cafe culture. This is Parisian elegance without the formality, a place where you can hang with friends for a satisfying bite.

Start with the raw bar, where Flay shows his mastery. Oysters and littleneck clams arrive on traditional ice towers but look closer: Bay Scallops Sophie gets tangerine hot sauce and crunchy garlic, yellowtail crudo comes with tomatillo and caviar, and the prawn cocktail trades ho-hum cocktail sauce for smoked chili.

Bobby’s spice-crusted bone-in ribeye is where Southwestern swagger meets traditional bistro fare. Certified Angus beef gets a smoked chili-honey glaze and roasted red pepper relish. The steaks arrive with herb butter, thyme and a choice of sauce—béarnaise for purists, chimichurri for those who appreciate Flay’s Latin influences or green pepper cognac for something in between.

The black bass amandine shows similar duality: classic French preparation with herbes de Provence, elevated by Flay’s instinct for bright, punchy flavors in the pan sauce. This is French technique done the Bobby Flay way!
