Holsteins debuted at The Cosmopolitan when the resort opened in December 2010, at a time when sizeable craft beer selections on the Vegas Strip were highly unusual. While they’re still not common, this casual gourmet burger restaurant has established itself as the beer place in The Cosmo, and ranks as a craft beer haven that rivals any in the Vegas tourist corridor and beyond.
Situated on the second level, the room exudes a warm, inviting atmosphere with wood floors, tables and walls; hanging Edison lights; earth tones of rust, browns and tan; a life-sized pink and white Holstein cow; and numerous whimsical cartoon images of bovines and burger characters throughout the space. The food menu features several signature burgers like the Rising Sun with dry-aged sirloin, cheddar and
caramelized onions, appetizers such as fries topped with pork belly and togarashi, salads and outlandish milkshakes.
The majority of the beverage offerings are devoted to the 24 beer taps and dozens more in bottles and cans, along with a somewhat secret Reserve Beer List with an additional 112 choices. All major beer styles are included, with renowned options such as Founders All Day IPA, Firestone Walker barrel-aged Stickee Monkee Quad and a lineup of Fifty-Fifty Eclipse imperial stouts. Local brews are not left out, with Able Baker Atomic Duck IPA, Big Dog’s Las Vegas Craft lager, CraftHaus Evocation saison and Tenaya Creek Hop Ride IPA rounding out the selection.
Overseeing the beverage program is Ivan Cuevas, who said, “When it comes to our bottle/draft program, we believe that great food, deserves even greater beer. Our extensive selection of beer has been carefully selected with the intent to complement the spicy, savory, sweet and rich flavors of our food. We are a locally founded company and love to support our neighborhood brewers, so you will always find a few of your favorite local brews on tap, and we want to represent our home state in such a way where travelers have an opportunity to see what the state of Nevada is brewing.”
