• The Red Dragon ($25). Inspired by the dragon, a revered emblem in both Welsh and Japanese culture, this highball combines Cygnet Welsh dry gin, Scarlet Aperitivo, red yuzu kosho, red shiso, ginger, cucumber and lime for a refreshing yet complex sip.
• The White Feather ($25). In this beautifully balanced interpretation of a sour, Cygnet 22, yuzu sake, lychee and cherry blossom are combined for a silky, ethereal texture. (In Japanese folklore, a white feather left at someone’s door is a sign that something meaningful lies ahead.)
• The Jade Empress ($25). Inspired by the guardian of the elixir of immortality and sovereign of a celestial paradise this cocktail combines Cygnet Welsh dry gin, matcha, Licor 43, cream, lavender and honey for a rich and velvety libation.
• Sakura & Smoke ($77). This Japanese-inspired interpretation of an Old-Fashioned is the centerpiece of the collection, a sublime combination of Cygnet 77 (the brand’s prestige gin, rested for 55 weeks in whiskey oak barrels), sakura smoke, salted honey and peach bitters. This is a cocktail that evolves with every moment.
