Americana (2620 Regatta Drive Suite 118, 702.331.5565) is a real treat, featuring a lakeside setting and an inventive chef/owner—Stephen Blandino, a veteran of several Strip restaurants. Not only will you get refined American fare, you’ll be able to experience several tableside flambé preparations for items like Steak Diane and bananas Foster. Recently, Blandino held a class showing how to flambé those items at home. Similar classes are held about once a month with very reasonable pricing, and the whole staff joins in, creating a friendly, intimate atmosphere for guests. –Nina King
