Manzo means “beef,” but that doesn’t mean that this artisanal experience located inside Eataly Las Vegas (Park MGM, 702.730.7646) is simply another steakhouse on the Strip. Manzo is an Italian butcher’s restaurant offering the highest-quality ingredients whether you’re eating meat, seafood, vegetables or pasta.

It starts with a cocktail like the Bull’s Eye, a twist on the Old-Fashioned with pancetta-washed Templeton Rye, or perhaps something more brisk like the Negroni Bianco. Share charred octopus with salsa verde and burrata before moving on to the 42-ounce dry-aged ribeye “Appesa” from Creekstone Farms in Kansas, a remarkable cut slow-roasted on Manzo’s three-tiered wood-fired grill.
