An innovative health-food restaurant is bringing its message of food that makes you feel better to the Las Vegas Strip. True Food Kitchen held its grand opening recently at The Forum Shops at Caesars, and if that event is any indication, customers are in for a true treat.

True Food’s concept is simple: You can focus on health and nutrition without sacrificing what makes eating out so much fun: flavor. To that end, True Food’s menu features thoughtfully crafted meals and beverages, although they encourage each customer to tailor their experience to their liking. Vegetarian? Vegan? Gluten-free? Meat eater? You’ll all find something to make your body feel instantly better.

For example, it’s cold and flu season. Looking to boost your immune system? Try True Food’s Winter Immunity Bowl, featuring lion’s mane mushrooms, farro, kuzu root and hemp seeds. Or try beverages featuring the vitamin-packed sea buckthorn, including the Medicine Man, Ginger Margarita and the Dr. Weil Wellness Shot (named after True Food Kitchen’s co-founder Dr. Andrew Weil).

Other examples of flavor-meets-healthy include fig and gorgonzola flatbread with garlic purée, carmelized onions and herbs, the chicken sausage pizza with crushed organic DiNapoli tomatoes, roasted fennel and smoked Gouda, and the Inside Out Quinoa Burger, served with hummus, organic tomatoes, butter lettuce, cucumber, red onion and avocado.

Entrées range from spaghetti squash casserole with crushed organic tomatoes, carmelized onions, zucchini and fresh mozzarella, shrimp Panang curry, served with sweet potatoes, green beans, bok choy, rainbow carrots, Thai basil and coconut curry broth, and Thai coconut sea bass, highlighted by coconut turmeric broth, shitake mushrooms, bok choy, green beans and rainbow carrots.
