On the Strip: Majordomo Meat & Fish

Celebrity chef David Chang’s latest fine-dining Las Vegas creation is the ultimate group dining experience. The menu at Majordomo Meat & Fish (The Palazzo, 702.607.3060) is built around majestic, shareable dishes, with the main attractions including cured and smoked prime rib served tableside with mashed potatoes, creamed spinach and savory au jus, and a huge plate of smoked beef short ribs (prepared in the style of Chang’s buddy and well-known meat expert and pit master Adam Perry Lang), with beef rice, spicy Korean ssamjang and crisp Bibb lettuce to create your own wraps.

There are other meat and seafood dishes you might want to pass around the table, like grilled striped bass with Sichuan peppercorns or a 60-ounce tomahawk ribeye with fries and cheese sauce, but the opening dishes are also fun and social.

The puffy Chinese flatbread known as bing is offered with vast options for toppings from butter and honey to chickpea dip, foie gras or Wagyu beef tartare. And the incredible cheese-less macaroni, made with hozon, black pepper and truffle, is certainly a must-order dish here as well.
