Hank Greenspun is one of the towering figures in the history of Las Vegas (full disclosure: Without Hank Greenspun, there would be no Las Vegas Magazine—its parent company is Greenspun Media Group, named after the newspaper magnate himself). He’s also a key figure in the development of Green Valley, which is why Green Valley Ranch has its own restaurant dedicated to his legacy: Hank’s Fine Steaks & Martinis.

To have a meal here is to be introduced to Hank’s high standards. Every aspect of your meal, from the impeccable décor to wonderful service to amazing food, is something you’ll remember for years to come. This is classic steakhouse fare done to perfection.

Any starter you pick will make you smile, including the crab cakes smothered with Cajun remoulade, the lobster chowder jampacked with applewood bacon, corn and Yukon gold potatoes, and the French onion soup, covered with Swiss, Gruyère and Parmigiano-Reggiano.

Hank’s has any cut of steak you want—filet mignon, bone-in-filet, Kansas City strip, T-bone, ribeye. There’s also American bison and melt-in-your mouth Kobe carpaccio. Of course, you can go in a different direction and be just as satisfied with the buttermilk fried chicken, Colorado lamb chops and veal chop. Vegans have choices here too, from roasted eggplant with miso glaze to a cauliflower “steak” served with carrot mousseline, marble potatoes and winter herb chimichurri. You might just convince the meat-eaters at the table to order this themselves.

Don’t forget dessert here. We’re partial to the fried Oreos served with vanilla bean ice cream, but fruit lovers will love the tableside bananas foster (dessert and a show), lemon Meyer tart and strawberry rhubarb pie.
