In July, Marc Vetri’s Osteria Fiorella started as a pop-up inside Terra Rossa at Red Rock Resort. Turns out, the restaurant’s trial run was really more of an audition, because by the end of August, the casual Italian eatery became part of the property’s culinary lineup, permanently replacing Terra Rossa. Finally, Vetri can once again serve his delectable Italian dishes to the Vegas community. Here, Vetri focuses on the classics.

To whet your appetite, start with Sal’s Meatballs, which are served with whipped ricotta and a slice of garlic durum focaccia. Move on to homemade pastas like the pappardelle with duck ragu and black olive, the rigatoni with sausage ragu, or the delightful ricotta gnocchi served with crispy leeks. Other standouts include a classic Margherita pizza and the veal chop with braised mustard greens.
