October is Vegetarian Month, and while you’re in Las Vegas there’s plenty of ways to satisfy your veggie cravings. Whether you’re a practicing vegetarian or just want to help celebrate, you’ll find the following restaurants on the Strip offer memorable, truly tasty, lip-smacking dishes.

First up, health-conscious True Food Kitchen (702.340.2600) at The Forum Shops at Caesars is a veggie-lover’s delight with dishes like edamame guacamole and a teriyaki quinoa bowl, not to mention perfect-for-fall dishes like butternut squash pizza and butternut squash soup. Nobu (702.785.6628) inside Caesars Palace is a top favorite for sushi lovers, but vegetarians can delight in the eatery’s vegetarian and vegan omakase menu for $100, which features courses like tofu sushi, vegetable ceviche, avocado tartar and mushroom soup.

If you’re at The Venetian, stop by Black Tap Craft Burgers & Beer (702.414.2337), where you can dig into the Impossible burger or The Vegan Nashville Hot—a breaded portobello with Nashville hot sauce, coleslaw and pickles on a vegan potato roll. Also on property is chef Lorena Garcia’s ode to Latin cuisine, Chica (866.659.9643). Veggie highlights include a wild mushroom tostada, potato and cheese empanadas, grilled sweet corn elote, slow-roasted sweet potatoes and a grilled mushroom quesadilla.

For more south-of-the-border veggie fare, stop by Border Grill (702.632.7403) at Mandalay Bay. Grab a table out on the patio that overlooks the beach area and dine on specialties like tortilla soup, crispy potato and ceviche tacos, plantain empanadas and roasted cauliflower tacos.

Take your meat-eating sidekick to an upscale dinner you’ll both love at Bugsy & Meyer’s Steakhouse (702.733.3111) at Flamingo. While they tear into steak, you can enjoy picks from a vegetarian menu that includes a roasted cauliflower steak, forest mushroom cannelloni and a vegetable ceviche.

Next door at The Linq Promenade, the outdoor entertainment and food complex offers plenty of veggie-friendly spots like Jaburritos (702.901.7375) with dishes like the Venice bowl with Gardein “steak” or tofu, avocado, roasted corn, black beans, cucumber, romaine and a sweet chili sauce. At Gordon Ramsay Fish & Chips (702.322.0529), try the Dirty Fry #2 with crispy potato chips in truffle sauce, Parmesan cheese and chives. Virgil’s Real Barbecue (702.389.7400) offers its own vegan black bean burger and crispy hush puppies; and Yard House (702.597.0434) offers a menu packed with meat-free creations like orange chicken, wings, grilled chicken sandwich, Beyond Burger, Wisconsin cheese curds and pizzas.

Sadelle’s (866.906.7171) at Bellagio offers a filling and fun bagel tower with assorted fresh-made bagels and all the fixin’s like cream cheese, capers, cucumbers and tomatoes. There’s also tasty cheese blintzes, Belgian waffles, a garden omelet, mushroom barley soup and more.

At Salt & Ivy Café and Patio Bar (702.590.9899) at Aria, grab a table808778 on the gorgeous patio and order vegetarian favorites like the huge, shareable Dutch Baby pancake that comes in a cast-iron skillet in recipes like the Heavenly Veggie and Blueberries & Lemon Curd.

A memorable “burger” fix can be found at Shake Shack (702.740.3311) at New York-New York: the Shroom Burger. The crisp-fried portobello mushroom is filled with melted muenster and cheddar cheeses on Shake Shack’s to-die-for bun and topped with lettuce, tomato and ShackSauce. Delish!
