When you hear the name Bobby Flay, can you immediately identify the culinary style that made him famous? Unless you’re a superfan of Flay’s, it’s not as easy as you might think, for he’s a straight-up New Yorker with a Northeastern attitude that suggests he became famous for slinging pizzas or serving up flavorful cuts of veal Parmesan. But, no, that’s not even close. In fact, Flay made a name for himself by cooking up fiery Southwestern flavors. And, in Vegas, those flavors are on full display at Mesa Grill.
One of Flay’s most popular dishes on the menu is the tiger shrimp and roasted corn tamale. But this is not your traditional tamale. It’s served nearly deconstructed, with a generous amount of shrimp and roasted corn bursting out of the tamale, resting on top of a creamy corn-cilantro sauce. Other standouts include the cornmeal-crusted chile relleno and the New Mexican spice rubbed pork tenderloin. For dessert, try Flay’s chocolate sticky toffee pudding, served with ice cream and a salty sweet cajeta sauce.
