Peak spring in Las Vegas means it’s time for big brunch plans and one of the Strip’s hottest spots for the midday weekend meal just reinstated its legendary offerings. STK (702.698.7790) at The Cosmopolitan is known for pairing a lively, social atmosphere with bottomless mimosas and bloody marys, plus chef Stephen Hopcraft’s delightfully rich take on classic brunch dishes. Among the favorites available Saturday and Sunday from 11 a.m. to 3 p.m. are a truffled wagyu flatiron steak with fried egg and crispy potatoes on buttered brioche; lobster and eggs Benedict with caviar hollandaise; spicy hot chicken and waffles with maple barbecue sauce; and cinnamon French toast topped with fresh berries and cream cheese icing.

Brunch is a big deal off the Strip, too, and one of the burgeoning neighborhood faves in Summerlin has incorporated live entertainment into the mix. From 11 a.m. to 4 p.m. every Sunday, Jing (725.735.7172) at Downtown Summerlin is dishing up honey French toast, Creekstone Farms New York steak and eggs and avocado toast alongside seafood towers and bottle service while DJs and live musicians keep the energy level high.

Another Downtown Summerlin haunt has unveiled a brand-new menu for spring. Makers & Finders (702.586.8255) is just as loved for its coffee drinks as for its innovative Latin cuisine, a soulful menu that now includes a breakfast empanada skillet, Spanish cioppino with octopus, shrimp, calamari and scallops, and the ranchero burger with pork belly and cilantro-lime crema. M&F has a Main Street location in downtown Las Vegas as well.

One of the Summerlin area’s most beloved Thai eateries just expanded into a new, larger location very close to its original site. Nittaya’s Secret Kitchen (702.360.8885) near the corner of West Lake Mead and Rampart Boulevards now has a beautifully expansive dining room and kitchen while its homey, balanced cuisine—like crispy pork belly, coconut shrimp and kao soi curry noodles—feels just as exclusive and special as it always has.

If you’re in the mood for Italian, it might be a good time to experience the full spectrum of this style of food in essentially one grand destination: at the Wynn and Encore resorts. Start with bellinis and carpaccio at the famous Cipriani (702.342.9600), which has a glamorous Las Vegas location at Wynn Plaza. Experience unparalleled seafood and pasta at Costa di Mare (702.770.3305), or opt for more casual fare such as lasagna, creamy burrata and wood stone pizzas at Allegro (702.770.2040). Or feast like the Chairman of the Board once did at Sinatra (702.770.5320), an elegant space highlighted by sophisticated versions of classic Italian dishes like meatballs, caprese, spaghetti and clams or veal parmigiana.

Finally, let’s head out to the west side of the Vegas valley one more time to sample the unforgettable food from a celebrity chef in the making. Jamie Tran is a contestant on the current season of Top Chef and her headquarters in southwest Las Vegas is Black Sheep (702.954.3998), where Vietnamese flavors are the influence but nothing is out of bounds. Try Tran’s salmon skin tacos with smoked shishito peppers, bao sliders with house-made pork sausage, slow-braised short rib with kimchi fried rice or crispy fried whole rainbow trout with ginger and rice vinegar sauce. This is one dining destination that really illustrates the depth of quality cuisine found throughout the city.
