One of the Las Vegas Strip’s most exciting new restaurants got even more exciting this month. Din Tai Fung, where art and food combine in the loveliest way, has introduced a wagyu black pepper beef dish to its Taiwanese menu. The wok-fried Mishima wagyu beef tenderloin is cooked with tri-colored peppers, onion and shimeji mushrooms and finished with a coating of house-made black pepper sauce.

It’s a fantastic addition to a restaurant specializing in xiao long bao, or soup dumplings. The Din Tai Fung legacy began in 1972 in Taiwan when proprietor Bing-Yi Yang began serving his special dumplings inside of his cooking oil shop. Decades later, the empire he created stretches across 13 countries.

Guests can watch the art of dumpling-making through the restaurant’s show kitchen, where more than 10,000 dumplings are made every day. In the dining room, set against a beautiful, open space with a 40-foot glass wall that allows the sunlight to pour in, guests are surrounded by a mix of nature-inspired design elements and contemporary architecture.

The fresh, umami flavors of the xiao long bao burst through with every bite—popular recipes include the traditional kurobuta pork with hints of ginger and green onion, truffle and blue crab, Jidori chicken and sweet onions, and the vegetarian option with bok choy, dried bean curd and shiitake mushrooms.

Delight in freshly made noodle soups like the vegetarian-friendly noodles with sesame sauce, a simple yet flavor-bursting recipe. Another popular pick includes the braised beef noodle soup with a slight heat to each bite. Think about adding some appetizers to your meal like the tender, sweet and sour pork baby back ribs coated in an addictive house-made sauce, the pleasingly crunchy and slightly spiced cucumber salad, the sticky rice wrap filled with Kurobuta pork, and the popular fried pork chop cut up into chopstick-friendly bites.

Wok-fried noodles and rice dishes, pork and vegetable buns, shrimp and pork shao mai and spicy wonton options help round out the menu, as well as a list of healthy greens including string beans, bok choy, sautéed spinach and kale, cabbage and mustard greens.

Desserts include the popular chocolate and mochi xiao long bao and the classic dessert, the red bean bun, a soft and fluffy bun filled with a sweet red bean paste.
