The strikingly updated Lake of Dreams show at Wynn Las Vegas is one of the most exciting new entertainment developments on the Las Vegas Strip, always an enchanting experience that has now been elevated to a definite must-see. But equally excellent is the cuisine at the two restaurants where you’ll witness this innovative extravaganza. Impeccably fresh seafood is the calling card at Lakeside (702.770.3310), where veteran Vegas chef David Walzog and his kitchen crew specialize in pristine preparations of Maine lobster and crab and line-caught fish from Hawaii. The waterside patio space here is just as elegant at the neighboring SW Steakhouse (702.770.3325), one of the most acclaimed steakhouses in the Strip’s history. Choose from dry-aged beef from the Midwestern states or A5 wagyu from Japan, and don’t forget to supplement your steak with peppercorn shrimp scampi, rich black truffle butter or maple-glazed bacon with shallots. Dinner and a show is redefined at these two regal destinations, but that’s just the beginning; there are visual delights everywhere in Las Vegas.

Sahara Las Vegas continues its revamp in the new year and has plans for diverse dining options set to arrive later in 2021. Until then, check out its newest restaurant concept, Uno Más Tacos & Spirits (702.761.7000), a vibrant environment ready for a party of a meal. Share fresh guac and a round of margaritas before dipping into innovative street taco creations like beer-battered cod with cilantro-lime slaw and pork al pastor with pineapple and avocado crema.

If it seems there’s always something new popping up in downtown Las Vegas, that’s because it’s true. The latest sensation in the Arts District is Good Pie (702.844.2700), a Brooklyn-style pizza joint that relocated from a tiny spot in Pawn Plaza to a cozy new bar and restaurant space on Main Street with a convenience service window slinging hot slices. Stick with the traditional New York-style round pies topped with roasted mushrooms, sausage and pepperoni, or embark on a quest to experience various square pizzas through the unique Sicilian, Detroit-style and crispy, homey “Grandma Pie” options. One bite is all it takes to realize how the new Good Pie has become a neighborhood favorite so quickly.

Over on Fremont Street, something fun and flexible has arrived adjacent to the restored Fergusons Hotel. Vegas Test Kitchen

(vegastestkitchen.com) is a restaurant incubator where different culinary concepts-in-development have the opportunity to test out dishes and refine operations, but for curious diners, it’s essentially a fantastic food court where you can take your pick of styles and flavors at any time. Current inhabitants may include ramen and dumplings from Slurp Society, slices and more from Yukon Pizza, savory and sweet baked treats from PopNPies and breakfast bites from Bodega Bagel and Banichka.

If you want to start the year with a new Vegas classic, head up the street to the brand-new Circa Resort & Casino for breakfast or lunch at Saginaw’s Delicatessen (702.726.5506). Open 24 hours seven days a week offering beloved sandwiches and diner-style dishes like corned beef hash, blintzes, omelets and latkes, this spot may spark nostalgia for casino coffee shops from bygone eras. That’s why it’s a perfect fit inside Circa, even if that Royal Flush Reuben is too big to fit on a plate.
