Here’s a little tip for you: Head off-Strip to the Suncoast resort in the upscale community of Summerlin in the western reaches of the Vegas Valley, and you’ll enjoy one of the most relaxing, delicious dinners you’ve had in a long time. The Suncoast’s SC Prime Steakhouse has a casual, intimate vibe with attentive staff and soaring, floor-to-ceiling windows that look out over the valley. Get a reservation just before sunset and you’ll have a gorgeous view of lights stretching across the horizon. It’s a little magical.

Start with a classic cocktail like a lemon drop, or a nice glass of wine, and you’ll find they go nicely with the sounds of jazz and Sinatra in the background. The menu here is focused on classic, quality steakhouse fare, and that starts with the appetizers. You can enjoy crab cakes with a red pepper remoulade or prime rib crostini, with shaved prime rib, horseradish spread and tender, melt-in-your mouth sautéed onions. The BLT wedge salad is crisp with a chunk of flavorful blue cheese and teardrop tomatoes. Sub in the house-made white French dressing and it couldn’t be better. And even the beef broth for the French onion soup is long-simmered in-house.

Steaks include custom-aged Creekstone Farms Prime ribeye and New York cuts, prime rib in two sizes, and a striking pan-roasted, 24-ounce, bone-in ribeye with cilantro garlic butter. All the sauces here are house-made, so indulge in peppercorn cream or a red wine reduction. Other specialties include the Chilean sea bass, served with white miso sauce and bok choy.

And the sides and veg are delish! Although the chef can create a special vegetarian dish (I recently enjoyed vegan empanadas with a tomatoey dipping sauce that was to die for), I’d recommend ordering up a few sides; the butter-whipped potatoes are so silky, and the huge grilled asparagus so very tender. Dessert might be in order—crème brûlée, a chocolate layer cake with salted caramel ganache, and sour cream cheesecake were recent options.
