Brilliant experiences new and old are bringing fresh energy to the Las Vegas dining scene. At Virgin Hotels Las Vegas, the renovated resort formerly known as the Hard Rock Hotel, the newest addition to an already stellar restaurant portfolio is Kassi Beach House (702.693.4000), a stylish Los Angeles transplant serving brunch and dinner with Mediterranean flair with lush, relaxing ambience. In the daytime, pass plates of burrata with pesto and roasted cherry tomatoes, ricotta pancakes with bruléed bananas, grilled flatiron steak and eggs, or sausage and broccoli rabe pizza. At night, when the energy level rises and the music gets you ready to hit the nearest dance floor, enjoy mezze platters, hamachi crudo with pineapple and jalapeño, wagyu beef meatballs or roasted salmon with ancient grains and lemon vinaigrette. Whether you’re nestled into your own private dining space or enjoying the resort’s pool scene from the patio, Kassi is a whole different vibe.

Just across Paradise Road, one of the most celebrated eating and drinking destinations has been restored to glory. Hofbräuhaus Las Vegas (702.853.2337) reopened on June 1, bringing back its classic Bavarian beers, live entertainment, world-class hospitality and all the potato pancakes, jumbo pretzels, schnitzel and savory sausages you can handle. No matter where you’re from, Hofbräuhaus is a must-have experience in Las Vegas and is always worth the trip.

When it comes to hearty, family-friendly fare in the neighborhood, there’s one longtime local favorite that has expanded to serve both sides of the valley. Amore Taste of Chicago (702.463.9163) specializes in deep-dish and thin-crust pizza, Italian beef sandwiches, barbecue ribs and other Windy City delicacies. Its original location on Durango Road in the southwest part of town is wrapping up a big-time renovation, but its newly opened Henderson restaurant on Sunset Road is serving up all the good stuff, from sausage and peppers to sweet cannoli, in a spacious and comfortable dining room fit for a feast.

On the Strip, there’s plenty of buzz for a new brunch at Catch (877.230.2742), the glamorous sushi and steak spot at Aria. Offered on Saturday and Sunday starting at 10 a.m., the innovative brunch menu includes everything from Catch favorites like truffle sashimi and the tuna tartare trio to indulgent cinnamon roll pancakes and a waffle tower with ice cream and chocolate ganache. And an entirely new brunch cocktail menu has flavors to satisfy all.

Another Strip spot for resplendent daytime dining is just off the famed Bellagio Conservatory. Sadelle’s Cafe (702.693.7075) is renowned for its bagels, eggs and other breakfast and brunch dishes, but don’t ignore the rest of the menu. Homestyle matzo ball soup, classic Waldorf and Cobb salads, tuna melts and grilled cheese sandwiches are as delicious as they are familiar. And the triple decker club sandwich is a force to be reckoned with, layered with turkey, roast beef, salami, ham and bacon. Be sure to slip in a side of onion rings or waffle fries to complete the old-school diner experience.
