At Wally’s Wine & Spirits in Resorts World Las Vegas, the coming weeks mean more than the turning of the seasons; they mean that the summer menu will give way to fall. 

And while you still can order those special summer dishes until Sept. 22, you won’t want to miss some of the signature items that Wally’s Wine & Spirits has nearly all the time. Those stellar dishes include chorizo-spiced grilled Spanish octopus, grilled salmon, a buffalina pizza with sweet pickled chili and Italian basil, classic steak tartare with shaved truffle, and wagyu tomahawk. And the Wally Burger is a longtime favorite on the menu.

For a luxurious meal, opt for either caviar service or a decadent cheese and charcuterie plate. Four separate types of caviar from Kavairi Paris are available, with prices starting at $155. It’s served with seaweed blini crème fraîche and pommes maxim (potato wafers). 

The choices for cheese and charcuterie are extensive and come from all over the globe—cheddar from England sits alongside German blue cheese, Spanish ham and Brooklyn-cured salami. Three or five selections are standard, but you can add more on (and you’ll probably want to). 

As befits the name, there are so many wines and spirits to choose from. The walls are lined with bottles of every imaginable variety. In fact, the venue acts both as restaurant and gourmet market, with more than 8,000 items available.
