And with that in mind, may we suggest you do just that by bellying up to the main bar at Carversteak at Resorts World Las Vegas? Because that’s where you’re going to find one of the best “hush hush” food items on the entire Strip.
The Carver-Steak & Egg Burger, which is, indeed, available only at the main bar (because it’s made in small numbers each night), is the brainchild of Daniel Ontiveros, corporate executive chef of Carversteak’s parent company, Carver Road Hospitality. It was originally created not for guests, but for Ontiveros himself, a “reward” at the end of a hard shift. But as with all great things, he couldn’t keep it a secret—word soon got out to the staff, and pretty soon he began making them on a regular basis.
Now you get to taste this opus for yourself. It starts with a light and fluffy sesame brioche bun, on which is smeared a light dab of horseradish cream. Then it’s piled high with a quarter-pound Mishima Reserve smash burger, an unbelievably tender 4-ounce American wagyu rib cap, a sunny-side up egg, Gruyère, crispy shallots and chimichurri. It’s served with perfectly prepared french fries and a variety of dipping sauces like chipotle aioli. (Do what I did: Get some ranch. It’s made in-house and seriously rocks.)
I want to stress this: You will not find this burger on the restaurant’s main menu; you need to ask for it. And after you’ve experienced this exclusive item for yourself, you’re going to have a choice to make: Shout it from the rooftops of social media, which could increase its popularity and jeopardize your chances of ever getting it again; or just keep quiet about it. Because trust me—once you’ve had this, your priority will be making sure it’s always available every time you grab that barstool.
