This Valentine’s Day, head to Aqua in Resorts World Las Vegas, where the chefs have come up with a four-course menu perfect for a dinner for two. 

Celebrated chef Shaun Hergatt is the mind behind Aqua, an intimate venue in The District, where caviar, seafood and quality meats rendezvous to create memorable meals. Most nights, you can start with such offerings as items as Tasmanian ocean trout with trout roe, calamansi and spicy kosho; crab cakes; shrimp toast with caviar sauce; and wagyu toast with a black olive spread. 

The main menu features seafood such as red snapper, uni risotto, Alaskan black cod and big eye tuna steak. The beef offerings include a Creekstone Farms prime ribeye or prime filet, a wagyu tomahawk and a wagyu strip loin from Allen Brothers of Australia, Hergatt’s homeland. Vegetarians are sure to dig the handmade potato gnocchi or a Thai red curry with butternut squash. 

On Valentine’s Day, take advantage of Hergatt’s special menu. An amuse-bouche is designed to get your taste buds singing from the get-go, with a brioche round serving as the base for tuna and caviar with a spot of spicy aioli. Take your choice of tuna tataki with wasabi ponzu, or beets and burrata with slow-roasted beets and a beet reduction for the first course. 

For the second course, Aqua’s lobster bisque envelops you in creamy flavor. Salad lovers, delight in La Rosa salad, accented with avocado sauce and lemon vinaigrette. Add on tuna tartare with quail egg, sesame dressing and nori if you are feeling decadent. The third course features shrimp risotto or ribeye cap with pomme purée. You can add shrimp scampi as well. For dessert, enjoy strawberry souffle with chocolate sauce. Reservations are recommended. The Valentine’s Day menu is also available Feb. 15-16.

If you are looking to dine early, Aqua’s Evening Kickoff prix fixe menu (available 4-6 p.m.) is a three-course menu with choices like Australian Caesar salad, crab cake, Australian wagyu hangar steak, gnocchi, spicy fried chicken and the Caviar Ball dessert with blackberry cheesecake. At $85, it’s an excellent way to dine at Aqua and enjoy a concert or nightclub later.
