If there’s room in the budget to splurge on one fancy meal, make it a delectable dinner at Sushi Roku. Not only will diners find incredible, high-quality seafood delights and a creative cocktail program, they’ll also enjoy a killer Strip view.

Start by sipping a refreshing Shoman Glory, made with Lalo blanco tequila, cucumber, kiwi and yuzu, for a citrusy, cooling beverage that could quench any heat-induced thirst that may have developed on the walk into the property. If sweet yet spirit-forward is your thing, try the Ueshima Old-Fashioned with Knob Creek espresso-washed rye, orange demerara syrup and chocolate bitters.

Before diving into the main event, treat the table to an order (or two) of the Brussels sprout chips. These delicate little Brussels sprout leaves are individually coated in tempura batter and fried to crispy perfection before being tossed in truffle oil and salt, making for an addicting app. To go with your newest fried favorite, consider ordering the yellowtail diced chilis, a sashimi dish with olive oil, ginger, ponzu and, you guessed it, diced Fresno chilis. While seemingly simple, each bite offers a complex balance of flavors, with the olive oil adding a layer of richness for the zingy ginger and the hot peppers to cut through.

Keep the evening rolling with some sliced rolls. For an exciting combination of ingredients, order the Tokubetsu, a crab and cucumber roll topped with toro, sea bream, black truffle pesto and yuzu vinaigrette. The fatty toro brings a succulent richness to this roll, while the earthy truffle pesto and the punchy yuzu dressing work in tandem to create a sort of equilibrium between sour, sweet and umami. Have something familiar (with a kick) with the Katana, a spicy tuna and shrimp tempura roll featuring tuna, yellowtail and spicy mayo on top.
