If you have yet to be invited inside Elton John’s and David Furnish’s home, Charo Ronquillo has the next best thing for you: Fizz Las Vegas. Ronquillo is general manager of the new champagne lounge at Caesars Palace, a hot spot brought to life in part by creative director Furnish.

“What (David and Elton) wanted (you to feel is) like you’re coming into one of their parties. … This is how they would have their parties, right down to the scented candles,” said Ronquillo, who noted that the small bites menu was created by John’s chef. Another of the duo’s touches is the artwork—51 pieces from their personal collection. “The pieces are so amazing, people come in here just to look at the artwork,” she said.

A veteran of the food and beverage industry, and a UNLV graduate in hospitality, Ronquillo says Fizz stands out from other Las Vegas lounges. “We want Fizz to be a treat. We want it to be special,” she said. “… It’s very welcoming, fashionable, hip; people want to be here and hang out.” She pointed out that Fizz is one of the very few places serving high-end champagne by the glass. “Dom by the glass—it’s available,” she said.

Stepping inside Fizz definitely seems like being invited into a high-end enclave for the fabulous. Ronquillo feels the same. “I’m 27 and I’m the general manager of one of the best spots in town; that’s amazing! … One day I was just sitting here … and I was like, ‘This is my life; this is so awesome,’” she said, smiling.

Fizz Noir

With more than a dozen high-end champagnes available by the glass, ranging from $9-$140, it would be hard not to find a favorite. But, if cocktails are more your style, Fizz offers handcrafted champagne cocktails and dessert cocktails, too. The most popular, the Fizz Noir, stands out for its perfect balance of bubbles and sweetness. It’s mixed with brut champagne, Grey Goose Cherry Noir vodka, egg whites, Fee Brothers cherry bitters, Trader Vic’s rock candy syrup, lemon juice and Heering cherry liqueur, with brandied cherries as a garnish.
